Fall means soup

I emerge briefly to let you know that this Roasted Tomato Soup is practically amazing, although I used beef broth instead of chicken, milk instead of cream, roasted onions, carrots, and celery along with the tomatoes, added more garlic, LOTS more herbs (including rosemary, which I highly recommend) and ate it with cilantro and chives on top.

One might argue that what I made is not the same recipe at all, but it was very tasty.

That sounds amazing. If only I had 8 pounds of tomatoes. :\

lol, no kidding. I did a quarter of a batch, which provided me enough for three meals.

How many tomatoes did that end up being? I don't have a scale at home, but I am thinking of whipping up a batch of this with the tomatoes I have.

I think it was about five small tomatoes (a little smaller than tennis balls?) I'd say, especially if you add extra vegis like I did, that having an exact amount isn't that important. Just add more or less milk and broth to taste. :)

Oh, thanks! I have four large tomatoes, so that might work. I know an exact amount isn't important but I wanted to be roughly equivalent. I had no clue how to estimate pounds to # of tomatoes! :) Mmm.. I am excited to try it.

What is vegis? :/

We're going to try this tonight, with as many tomatoes as we have (a bowl full of romas). Should go nicely with toasted cheese sandwiches. Thanks for sharing the recipe!
